Gingerbread man cookies, 2nd attempt.

Last week, I've tried baking Green's gingerbreadman cookies for the first time. Eventhough it looks good but it didn't taste like what we've expected. So yesterday, I tried doing some modification to the pre-mix, and it turns out to be tastier than my first attempt!! 

The ingredients: 
Green's gingerbread man cookies premix 
1 egg ( as required by the pre mix ) 
50g butter ( premix requires 25g, I add on another 25g )
75g sugar ( added by myself, the premix is not sweet at all ) 
50g cocoa powder ( added by myself, I prefer a hint of cocoa in my cookies )
1/2 teaspoon vanilla essence ( added by myself, cos I love the hint of vanilla in my bake ) 


Cream the butter and sugar together until it's creamy. 


Then add the premix, eggs, cocoa powder and vanilla essence, mix well and form into a dough. 


Rest the dough in the fridge for 15 minutes. 

Flour your board and rolling pin, and then roll them out to 0.5cm thin. The thinner you roll them out, the crispier you cookies are going to be. However, if they are very thin, baking time will be about 8-10 mins, instead of 10-12 mins. 

I rolled them out to about 0.5cm thin, and use my gingerbreadman cutter to cut them out, place them on baking tray lined with baking paper. Remember to space them out a little bit! 


And put them into the oven at 180 degrees Celsius, approx 12 mins. 


I decorated some of them with the color chocolate m&ns that comes with the premix. 


Once they are cooked, cool them a little on the tray, then transfer to a wire rack to cool completely.

Lastly, decorate your gingerbread man cookies after they have totally cool using ready icing or self made icing, there is instruction on how to make icing at the back of the box. 

Then, your gingerbread man cookies are all ready for your Christmas party! Simple and easy to make, and it's definitely the sweet thoughts of hand making them for all your love ones that is priceless!! You still have time to bake some now, Christmas is just 2 days away!
