Miso Soup for Dinner

Sunday night
Cold, humid and foggy Amsterdam.

I've been following a strict diet recently to loose a few pounds and some love handles. It's pretty sad when you can't fit into pants and dresses that you once looked so good in, and you start to look for cardigans or tops and dresses with sleeves because you can't stand the sight of your flabby arms. You look into the mirror everyday before you shower and before you dress to find yourself growing not taller or bustier, but rounder and sideways. It's time to do something about it!

Besides going to gym and swimming regularly, i start to skip carbs for almost all my meals, and try to stick to vege and seafood for all meals. Well, occasionally i do give myself some "off days" to indulge in beef and pork... Few nights ago i replace my usual bowl of rice with miso soup.

Why miso soup?

One plain cup of miso gives you 36 calories and only 1g of fat! It contains 2g of protein in every 25-calorie tablespoon of miso paste, making it a concentrate source of protein. It also contains magnesium, zinc, copper and iron, which is very important in stimulating immune function, healing wounds, boosting energy production and antioxidants. Studies and researches also show that fermented soy food, such as miso, delayed the appearance of induced cancer, resulted in lower rate of cancer. How amazing it is!!!!

It's as easy as a-b-c when it comes to making yourself a bowl of nutrional, warm and yummy miso soup.

Ingredients :

Miso Paste, easily available at most supermarket or japanese supermarket.


I love to add egg toufu into my miso soup. I also add in a teaspoon of noodle soup base to enhance the flavour.

Cut your seaweed into thin strips.


Add miso paste, noodle soup base and toufu into boiling water, stir to mix well. Add more miso paste if it's too blend, and bring to boil. Add the seaweed and voila!!!!

Toufu & Seaweed
By adding toufu and seaweed into miso soup, you are actually doubling the goodness you can get in that small bowl of soup. Toufu are a good source of protein, and also helps in promoting immune system and antioxidant in the body, the omega 3 fatty acid of toufu helps reduce the risk of heart diseases. Seaweed are high vitamin A, B and C, which are very essential in our day to day life. There are antioxidants, too, and help us to reduce the risk of disease and cancer, promoting good immune system against infection.
